Fine Goat Milk Cheese
from New York's Finger Lake Region!


Cayuga Blue Champignons

 

Ingredients:

1 dozen large, fresh Champignons (White Mushrooms) 1 small onion
4 oz. Cayuga Blue 1/4 stick of butter
2 strips of fresh bacon salt
1 large toe of garlic pepper

Wash and clean mushrooms and remove stem and scoop out central portion of gills. Chop the onion, garlic, bacon and mushroom stems into small pieces and sauté in a skillet with the butter until the onion is browned. Remove from skillet and place in a mixing bowl with the crumbled Cayuga Blue cheese and mix thoroughly by hand. Place a teaspoon full of this filling into each mushroom cap. Place the mushrooms on a cookie sheet and bake in the oven at 400 degrees for 20 to 30 minutes, being careful not to burn or overly dry out the dish. Serve while still hot.


Roasted Goat Cheese Bread

Ingredients:

One French baguette or loaf of French bread
8 oz of plain or herbed Chevre

Slice the bread into slices of about an inch in thickness. Spread a layer of goat cheese on each piece. Place in the oven at about 400 degrees. Bake until cheese begins to melt and the bread toasts to a crispy brown at the edges. Serve while warm.


Shrimp Cocktail Goat Cheese

Ingredients:

8 ox. plain Chevre log
6 oz. Jar of cocktail sauce
1 lb. frozen peeled and cooked baby shrimp
a box of your favorite snack/party crackers

Place chevre log on serving platter. Pour cocktail sauce over the chevre log. Sprinkle shrimp over and around the chevre log. Serve at room temperature with crackers.


Lively Run Feta Salad

Ingredients:

Three vine-ripened tomatoes salt
1 large onion pepper
8 oz. Lively Run Goat Feta olive oil
garlic powder vinegar

Thin slice tomatoes and onion. Lay the slices of tomato on a serving platter. Cover the tomatoes with the slices of onion. Crumble the goat feta and sprinkle over the top of the onions and tomatoes. Season to taste with salt, pepper and garlic powder. Sprinkle generously with extra virgin olive oil and vinegar. Serve at room temperature.


 

Lively Run Goat Cheese Pizza

Ingredients:

1 Pizza Crust/dough 8 oz. of Lively Run Caper goat cheese
8 oz. pesto with pine nuts 1 head of baked garlic

Bake garlic until soft. Squeeze the garlic pulp out of each clove and mash in a bowl. Shred the goat cheese and mix it into the garlic. Spread the pizza dough on a pizza pan and spread goat cheese mixture over it trying to cover as much of the surface as possible. Drain oil from pesto and spread pesto over top of cheese/garlic mixture. Place in oven and cook at 400 degrees for 10 to 15 minutes.
